Cream is simply made by boiling down the syrup farther and taking more water out of it. It is then cooled to room temp. and mixed in a cream machine. In the past, these machines have always been “paddle type” machines, but the results have been the cream has always turned out gritty, because the sugar crystals are not properly ground up. We have the newest cream machine on the market where the cream is pushed through a gear pump and the result is a much smoother , consistent batch of cream.
